Keto Chicken Caesar Salad

This Keto Chicken Caesar Salad is very filling, and perfect for those Caesar Salad cravings when you're trying to succeed on a Keto diet. Really, the only part of a Caesar salad that makes it unfriendly for keto is those darn croutons, which are basically the best part. Instead of having to order your salad without croutons (which is punishable by perpetual shame), you can enjoy the same taste as croutons without the guilt!

Really, the only hack we are doing here is replacing the crunchy, garlicky croutons with crunchy, garlicky cheese. Note that the amount of parmesan cheese is for six days worth of salads but all other ingredients are for a single salad.

 1 cup shredded parmesan
 1 tsp seasoning
 2 cups romaine lettuce
 2 tbsp caesar dressing
 1 lemon wedge
 2 oz grilled chicken

To begin, you will want to use a baking sheet lined with either a silicone mat, parchment paper, or aluminum foil. I really don't recommend using the pan bare, just for the sake of clean up, but if you must, this will still work. Arrange your shredded cheese into little discs, as pictured. At this point, sprinkle a bit of your seasoning on top, or you can use raw garlic, parsley, salt, etc. I just put a rosemary herb blend on top to add a little more flavor.

You can use the broiler on low, or set your oven to 375 degrees. At this point you are going to keep an eye out (especially if you are using the broiler!). Watch for the cheese turning brown and crispy. It will be a little uneven, unless you have perfect cheese disk game, in which case, I salute you. But more than likely, your thinner ends will burn a bit. That's fine! You don't want the center to be too pale, but these can burn quickly, so if you're going past 15 minutes in the oven, you may want to babysit a little bit to make sure you are catching them before they burn. If you are using the broiler, 15 minutes may even be too long. Make super sure you are paying attention!

Once they are cooked to your liking, on mine you can see the burned edges a little bit, you can just move them to another surface and whack them with a spoon or fork, meat tenderizer, etc. to break them into pieces.

Sprinkle the pieces over your salad. Mine consists of romaine, grilled chicken, some generic caesar dressing, lemon juice, and these crispy cheese pieces!

Making it this way does follow keto rules, with only about 4g of carbs, but if the dressing has you concerned you can thin it out by mixing it with the lemon juice directly, or just skip it all together and use your favorite keto caesar dressing instead. The choice is yours!

    I love this idea for replacing the croutons. I’m sure the cheese substitute is quite flavorful and a nice addition to the classic Caesar salad taste. Caesar salads are my favorite, but I consistently have a hard time locating a dressing with the right flavor. Most of them taste too much like mayonnaise in my opinion. For this reason, I am always buying the dole salad kits. I really wish they’d bottle what they put in those kits. The closest I’ve been able to find is Panera Bread brand Caesar dressing. Thanks for posting this keto friendly salad recipe idea! 💙

      Try the Litehouse Caesar! It’s my fave and it’s nice and garlicky!
