Apple Peanut Butter Cookies

This is just a random recipe I thought up the other night when I wanted something sweet for a midnight snack and it honestly turned out to be pretty good. Let me know in the comments below if you're into it!

Ingredients
 ½ granny smith apple, medium sized
 1 egg
 ½ cup granulated sugar
 ½ cup brown sugar, packed
 2 tbsp ground cinnamon
 ¼ tsp salt
 ¾ tsp baking soda
 ½ tsp baking powder
 1 ¼ cups all purpose flour
 ¼ cup butter, softened
 ½ cup peanut butter
 ¼ cup shortening

Gather all ingredients; if butter is not softened already you can heat it in the microwave for no more than 10 seconds then whisk the butter with a fork to get a creamy consistency.

Mix sugars, butter, shortening, egg and peanut butter in a large bowl.

Core and dice half of an apple and add it to the mixture.

A little at a time add the remaining dry ingredients into the batter, mix until you get a thick consistency then refrigerate for 4 hours.

Next preheat the oven to 375 degrees and lightly grease a baking sheet or you can line it with parchment paper or a silicone mat. Roll cookie dough into 1 1/2 inch balls and space a few inches apart on your baking sheet, no more than 8 cookies per sheet. Bake for 13 minutes.
Pro tip: you can use an ice cream scooper to speed this step up and ensure cookie sizes will be similar.

Once the cookies are finished baking immediately transfer them, using a spatula, to a cooling rack and let sit for 5 minutes before serving.
