Blueberry Lemon Breakfast Cake

I absolutely love the combination of blueberry and lemon and they come together perfectly in this breakfast cake!

Cake ingredients
 ½ cup buttermilk
 1 tsp vanilla
 1 egg
 ½ cup butter
 1 cup sugar
 2 cups all purpose flour
 2 tsp baking powder
 2 cups blueberries
 1 large lemon, zested
Topping
 1 tbsp sugar

Preheat oven to 350 and grease 9inch square baking pan

Mix butter, lemon zest, and 1 cup of sugar. Consistency should be gritty, like a sugar scrub.

Add egg and vanilla to mixture and blend until it creates a creamy batter.

Whisk together flour, salt, and baking powder in a medium size bowl.

Add the dry ingredient mixture and buttermilk to the batter a little at a time, alternating between the two. Your batter should now be a thick consistency.

Next we’ll fold the blueberries into the batter, a little at a time.

Pour batter into baking pan, level out with rubber spatula, and evenly top with 1 tbsp of sugar. Bake for 35-40 minutes.

Once finished baking let cool for about 10-15 minutes before serving.
